Five fabulous raspberry drinks

Summer may be coming to an end, but gorgeous raspberry flavours do not have to. Sweet but also sharp, these berries lend themselves perfectly to some of the best drinks around. Here are five options to keep summer alive.

Raspberry, coconut and ginger milkshake

This delicious, fragrant shake feels healthy! Use frozen raspberries if you can’t get fresh; these are good for you, as reported in the Guardian. Use coconut milk ice cream and blend it with raspberries and fresh grated ginger for a beautiful, thick shake with a bit of bite.

This is so easy to make and, unlike a lot of cocktails, is not too sweet. Muddle some raspberries in a cocktail shaker, then add the juice of a lemon, 50ml rum, a teaspoon of agave syrup and ice. Shake hard for ten seconds. Strain into a glass, top with 75ml ginger beer, and give a stir before serving.

Raspberry and rum iced tea

Make a raspberry syrup by heating fresh raspberries, sugar and water until boiling; alternatively, use a few drops of a natural raspberry flavouring from a producer such as http://www.foodieflavours.com in place of the fresh berries. Combine 250ml raspberry syrup with 750ml brewed tea, 110ml lemon juice, 110ml light and 110ml dark rum and ice cubes. Stir well and serve with some mint leaves.

Raspberry cobbler cocktail

Perfect for brunch, this fresh drink is made with a crisp sherry. Grab a cocktail shaker and fill it with ice. Next, add 150ml sherry, half a teaspoon of icing sugar, one split vanilla bean, a pinch of cinnamon and a handful of raspberries or natural raspberry flavouring, then shake for 15 seconds. Fill your glass with crushed ice and strain the drink over the top, garnishing with a few more fresh or frozen raspberries if you have them.

Homemade raspberry liqueur

Another way to get that fresh, tart raspberry flavour to last is to create this DIY liqueur. Put fresh or frozen raspberries in a large sealable jar and cover with sugar and vodka or gin – whichever you prefer. Seal the jar and shake vigorously several times on the first day until the sugar has dissolved. Store for at least one month (longer if possible), shaking every day or so, then bottle and use as it is or in other cocktails. Delicious!
